Siberian (Acipenser baerii)

The Siberian Sturgeon, known as Acipenser baerii, features a unique appearance with a slate-gray to blackish-brown coloration on its back and paler undersides. This sturgeon is known for its adaptability to various aquatic environments, making it a preferred choice for aquaculture. It can reach lengths of up to 1.5 meters or more, with some weighing several hundred kilograms. With proper care and conditions, the Siberian Sturgeon matures at around 6 to 9 years of age and can live for several decades. This remarkable species is coveted for its exquisite caviar, featuring medium-sized, glossy, dark brown to black eggs known for their mild and buttery flavor.

Russian (Acipenser gueldenstaedtii)

The Russian Sturgeon, scientifically known as Acipenser gueldenstaedtii, is easily recognizable by its shining, diamond-shaped scales. Its sleek, robust body typically displays a slate-gray to olive-green coloration. The Russian Sturgeon is particularly esteemed for its caviar production, as it yields some of the most sought-after eggs in the sturgeon world. This species can grow to considerable sizes and mature for caviar production after several years. Russian Sturgeon caviar is celebrated for its rich, nutty flavor, and its large, dark brown to black eggs are highly regarded by caviar connoisseurs for their exceptional taste and texture.
